Ooopsie, I miss sandwiches !
Ladies and gents, I love sandwiches.
I have found a solution to eat sandwiches without the wheat/carbs. Of course it does not taste like a fresh subway sandwich but just as satisfying without the stomach pain and guilt! I shall share my newest go-to for lunch at the office.
OOPSIE ‘bread’:
-Preheat oven to 375 degrees.
-Carefully split 4 eggs into two different bowls.
-Add a tsp of baking powder and a pinch of salt to the egg whites.
-Add a ½ a tub of cold cream cheese (~125grams and any flavour!) to the yolks.
-Use an egg beater and whip up the egg whites until they form peaks (you should almost be able to turn the bowl upside down and not have it fall).
-Move the egg beaters over to the yolks and mix it well with the cream cheese.
-Carefully, fold the egg whites into the yolk mixture. Make sure to be careful not to deflate the 'whites’.
-Put PARCHMENT paper on a baking sheet and dollop it on in 'sandwich’ size servings.
-OPTIONAL: sprinkle with seeds or herbs ( or CHEESE!).
-Bake for about 12-15mins (until golden) and let cool
